So we had a Cherry On Top birthday party! I have three kids now, and a blog that has become a full time job. I affectionately refer to her as our Cherry On Top. Over the weekend we celebrated our sweet little Piper turning one! This cookie isn't too bad though.This Cherry Vanilla Bean Fudge is easy to make and just FIVE ingredients. It wasn't as fragrant as I had hoped so maybe that was the fault of the vanilla extract. I didn't have vanilla beans so I just used vanilla extract. Very special dessert.especially for 'just a cookie'. It added a really nice vanilla bean flavor and all the lovely little flecks, and with less mess/hassle. Instead of dealing with vanilla beans, I used two teaspoons of vanilla bean paste and no extract. Next time, I will try forming balls and see if I can get a softer cookie. The cookies came out very flat and crispy. I made the recipe exactly how it was written with the exception of substituting Nielsen-Massey Vanilla Bean Paste (per the directions on the bottle) for the vanilla bean. So yummy! I just rolled dough into balls,rolled the balls in red and green decorating sugar for Christmas, and flattened them a bit-and they turned out great! Very soft, with a very vanilla taste! They are addictive! We'll be making them again as heat shapes for Valentines Day. I used 2 expensive vanilla beans for this?!! Yeah, I was disappointed. A little crisp on the very outside edges but mostly soft. I was hoping, like other reviewers, that my cookies would turn out crisp but they were really soft. I used all the correct ingredients and simply rolled the dough into balls and then in some sanding sugar. The only change I made was to not chill the dough. Or i put one on those silicone liners on. I really like this recipe although it says that you don't need to greese the pan, you do. An adult take on a kid classic, probably the most amazing, though simple, cookies ever. I make these every year for my annual tree trimming party and they are a huge hit. If you like softer cookies, cut a little thicker. I refrigerated the dough and then rolled into two logs, refgrigered overnight and sliced about 1/4 inch or so. Nice crisp cookie with vanilla rich taste. Cookies may be made 2 days ahead (see note, above) and kept between sheets of wax paper in an airtight container. With a metal spatula transfer cookies to a rack to cool. Arrange cookies 1/2 inch apart on ungreased baking sheets and bake in batches in middle of oven 10 to 12 minutes, or until edges are pale golden. Cut log crosswise into 1/4-inch-thick slices and dip cut sides of slices in sugar on platter. Remove wax paper and roll log in sugar (not all sugar will adhere to log). Put remaining 1/4 cup sugar on a platter. Dough keeps up to 3 days wrapped in wax paper and foil. Chill dough until firm, at least 4 hours. On a large sheet of wax paper form dough into a 10- by 2-inch log and roll up in wax paper. Sift flour, baking powder, and salt into mixture and beat until just combined.

Scrape seeds into butter mixture and beat in egg and vanilla extract until combined well. With a knife halve vanilla beans lengthwise. In a bowl with an electric mixer beat together butter, shortening, and 3/4 cup sugar until light and fluffy.
